Brezaola is a raw beef meat delicacy based on Italian technology. The back inner hip part of the carcass is used in the preparation. Beef is marinated in spices based on salt, sugar, rosemary, thyme, black pepper and juniper. Depending on the size, the piece lasts from 4 to 8 weeks. It goes very well with wine, is used as a cold snack or in the preparation of bruschettas and pizza.
