Raw beef basturma.
The basis is a classic Armenian recipe. The meat is salted and pressed for about a week. Then it is rolled in a special mixture (Chaman), which contains more than ten spices. It is based on fenugreek, as well as a mix of hot peppers. Basturma is aged from 4 weeks in special climate chambers. Often used in the preparation of meat plates or cold appetizers. Wonderful breakfast with beer.
